Another QUICK and YUMMY dinner.
Chicken Pasta Primavera
2 C. uncooked spiral pasta (I probably cooked at least 2 1/2 C.)
1 lb. boneless, skinless chicken breast, cubed (again, I used more)
2 garlic cloves, minced
2 Tbs. butter
1 (16 oz.) pkg. frozen broccoli, cauliflower & carrots, thawed
3/4 C. whipping cream (I bought the smallest carton and b/c I added more pasta, I used the whole carton, probably about 1 C)
3/4 C. grated parmensan cheese
1 tsp. salt
1/4 tsp. pepper
Cook pasta according to pkg. directions. Meanwhile, in a large skillet, saute chicken and garlic in butter until chicken is no longer pink. Add the vegetables and cream (I started with the 3/4 C. and then added the rest after I had added the amount of pasta I wanted to put in). Cook until the vegetables are tender. Drain pasta. Add pasta, parmesan cheese, salt & pepper to the skillet. Cook and stir until heated through.
Says the recipe serves 4, but with the extra pasta/chicken I added, we had plenty plus leftovers!
*Sorry for all my notes within the recipe, but I thought they might help! Hope you enoy it as much as we did!

Potato Cheese Soup
So I've been branching out & trying some new recipes and thought I'd share some that were approved by the whole family. Yesterday was cold and wet, so I tried this soup recipe.
3 C. chopped potatoes (the recipe didn't specify, so I left the skins on)
1 C. water (or maybe more...just make sure your veggies don't burn on the bottom while cooking)
1/2 C. celery (I chopped mine b/c I don't like slices of it...but you could just thinly slice)
1/2 C. thinly sliced carrots (I also chopped these)
1/4 C. chopped onion
1 (10-12 oz) pkg. frozen chopped broccoli (I also chopped these so the pieces were a little smaller...just personal preference)
1 tsp. parsley flakes
Dash of pepper
Boil all together until tender (about 20 minutes). Stir often and check water level so bottom doesn't burn.
Add:
1 chicken bouillon cube (make sure it gets dissolved completely)
1 1/2 C. milk
1 Tbs. cornstarch (mixed with a little cold water)
1 (8 oz.) pkg. Velveeta Cheese, cut into chunks - I probably used closer to 12 oz.
Heat until Velveeta is melted and ingredients are well blended.
We served ours in bread bowls and topped with a little sour cream, bacon bits, and Jared & the kids added grated chs. SUPER yummy and easy!
Potato Cheese Soup
(It should be called Cheesy Potato & Broccoli Soup, b/c even though there's not a ton of broccoli, it's tastes like a broccoli cheese soup more than a traditional potato soup. So if you don't like broccoli soups, just omit and this would still be a yummy potato soup.)3 C. chopped potatoes (the recipe didn't specify, so I left the skins on)
